One of the many many things my wife Joanne does so well is make sandwiches. I often muse that if all else failed she could open up a world-class sandwich shop and I would just be the server.

 

Last weekend Joanne made chicken salad with celery, dill, lettuce, home grown tomatoes and Hellman's mayonnaise (a very important ingredient) on toasted soft white bread.. Yum, Yum!

 

The roots of this delicious combination spring from her mother Catherine Peters.

 

What is your favorite sandwich and tell us it derivation?

Is there comment padding going on here? My husband convinced me to buy a panini press. I thought it would be a waste of money. But, tell Joanne, every sandwich tastes better on the panini press.

Great subject....Diane teases me about my love of white bread for sandwiches. I don't want a bread that's going to steal away the actual taste of what's in the sandwich to begin with ! I do deviate. Carnegie Deli sandwiches with rye. In California they serve French's bright yellow mustard on everything ! Yuck ! The land of the fruits and nuts and cheap crappy mustard. I carry my own bottle of Guldens in the glove box of my car. I have discovered Dutch Crunch bread...Good with thinly sliced rare roast beef, salt and pepper, vinaigrette and a small slice of red onion. I always order extra meat (Carnegie Deli style )...The meat HAS to be very rare....So...as you can tell The Carnegie Deli is my quintessential benchmark....In California it's all about everything else on the sandwich but the meat...UGH !! Tell Joanne to try mixing a little Curry Powder in the chicken salad...You will be transported to Mumbai...That is if you like curry...The only thing that trumps a good RARE roast beef sandwich for me is a Lobster Roll on the East End....Lots of MAYO and it has to be Hellmans !!

Oh yes...I forgot about Schmalz.....The Roast Beef sandwich....The bread should be spread with Schmalz....If I ask for that in California they call security...I make my own instead....Rendered chicken fat stored in a small container and kept in the fridge...Boo Yah !!

My favorite sandwich ever I used to make myself when I worked at a 24 hour deli back in college. They had these awesome thick, tender chicken cutlets. I would put two hot cutlets on a hero with extra mayonnaise, shredded lettuce and thinly sliced tomatoes. Would be luck to finish half of it these days, but back then I could polish one off at the end of a night gleefully.
