[Promo] Michael Laiskonis on colonial history of chocolate

Michael Laiskonis left the kitchen as Executive pastry chef of Le Bernardin
to start working as the creative director of the Institute of Culinary
Education - ICE. Where I had the honer of being invited to his Chocolate
Making in New York: A Colonial History.

With a focus on European development of chocolate over the centuries, his
program brought it home. Michael even created chocolate that would have
been made over a hundred years ago during the Industrial Age in NYC. See
