American taste have changed in the last decade with the trending foods and
beverages like kale, imported Italian sodas, IPAs, craft cocktails,
espresso and dark chocolate.

Our tolerance for bitter flavors is ratcheting up our choices and
fashionable on every hip bar and restaurant menu. It’s no wonder that the
pendulum is shifting from a nation that still leads the world in sweet
consumption (and obesity) to a more sophisticated palate. Are we suffering
from palate fatigue and seeking relief with new and interesting taste
sensations?
