Hello Along the Network,

 

Here's an easy, delicious summer recipe:

 

BISTECCA FIORENTINA (Porterhouse Steak Florentine Style)

 

Plain grilled Porterhouse with a couple of unusual twists.  Here's what
to do:

 

Slather the steak with sea salt and (yes) cornstarch.  Then place the
steak(s) on a wire rack over a rimmed baking pan and put it (them) in
the freezer for an hour.  Steaks should be about 1 1/2 inches thick.
Grill five minutes per side at high heat, rotating after 2 1/2 minutes
(to get cross-hatched grill marks-- looks really nice).  This should
yield medium-rare beef with a flavorful crust (thanks to the cornstarch,
which imparts no flavor of its own).

 

Tent the steaks and let them rest (the meat re-absorbs and distributes
its juices) about five minutes, then slice the meat into 1/2 inch
slices.  

 

Now, here comes the best part:  Drizzle the steaks with good,
high-quality extra virgin olive oil and squirt on some lemon juice (must
be fresh).  

 

I promise you've never tasted anything so good in your life.  The
in-laws were wowed (and they're Argentines and know what steak is
supposed to taste like).

 

I did some twice-cooked asparagus with Parmesan cheese and an insalata
tricolore, which is endive, radiccio and arugula with a balsamic vinegar
and olive oil dressing.
